Cheese of the Horse
This is a great cheese from sicily that is known as cheese of the horse. It is made from rare cows in sicily the curd would be formed, tied with a rope, and tied to the saddled handle to be taken to town. Similar to a firmer provolone with a rind it is excellent served with wine or a charcuterie board. Be advised there is a rustica version of cacio cavallo which is sharper and very hard more for cooking this is for enjoying sliced.

Authentic Caciocavallo Cheese
I used this caciocavallo cheese to make a traditional Sicilian Scaccia. It was delicious, and exactly what the recipe called for. The cheese was packaged just like it is shown on the listing. Wrapped in wax, with the string around the top.

Poor customer service
I have ordered at least 10 of these caciocavallo cheeses from Alma and have enjoyed them. The last two have been considerable less quality with the last one arriving not sealed and curdled surface. The customer service was terrible and I will not be ordering from Alma again.

This Cheese did not arrive as presented in the online Amazon picture
Purchased this cheese on Amazon for my Italian father as a gift and reminder of the "Old Country." It did not arrive with the string or tag attached as in the online Amazon picture. I was disappointed. It looked more like a commercial kitchen shipment vs. a retail package. Cheese was plastic shrink wrapped... am fine with that. It had a plain nutrition label stuck on the shrink wrap. The label indicated it was "Provolone Cheese - Caciocavallo" and was made in Italy. I could've bought provolone cheese an my local grocer. Am a bit dissappointed in my self-education (I.E. Caciocavallo = Provolone?) through this purchase, but also in the packaging of the cheese. Since I bought two, I did taste the cheese and it IS Provolone. I thought Caciocavallo Cheese would be something special for my Pops... Guess not, but I will keep one for me and still give the other to him.
